It is grown on a certified organic single estate, upholding rigorous environmental and quality standards. While not hand-picked, it is carefully harvested using semi-mechanical methods that allow for greater control over plucking. (UK & Taiwan has signed MOU on mutual recognition of organic products in 2024)

 

Taiwanese Style vs Japanese Green Tea

There are several differences between Japanese and Taiwanese green teas, but one of the key distinctions lies in how oxidation is halted: Japanese teas are typically steamed, while Taiwanese teas are pan-fired.—a traditional method that encourages a smoother, rounder character. This fundamental difference influences the flavour profile—Japanese teas tend to be brighter and more grassy, while Taiwanese green teas are smoother, with a rounder body and more subtle herbal character.

 

Building on this foundation, our award-winning tea master has developed his own refined technique to further enhance the tea’s flavour and aroma. The resulting infusion is honey-green in colour, with a silky texture, soft herbal notes, and Taiwan’s signature lingering clarity (hui gan 回甘) and refreshing hydration (hui run 回潤). A quiet, expressive green tea that reflects both craftsmanship and terroir.

 

Cultural Reverence and Ancient Origins

Green tea has long been revered in East Asia, from ancient China to Japan and Korea, where it has played a central role in religious and cultural traditions. In these settings, tea was more than a drink—it was a spiritual practice tied to virtue, clarity, and inner discipline. This spirit of reverence continues to shape how we grow, prepare, and enjoy tea today.

 

Brewing Guide

  • Water temperature: 80–100°C (Can be brewed with boiling water without bitterness, thanks to Master Hsieh’s uniquely developed technique)
  • Hot Brew – Tea/Water Ratio (g/ml):
    • Single infusion: 1:100, 3–4 minutes

    • Multiple infusions: 1:35 (range 1:20–1:40). Start with 60–80 seconds for the first infusion; adjust steeping time according to taste. Suitable for at least 3 brews.

  • Cold Brew: 1:100–200 ratio. Steep in the fridge for at least 6 hours.

    Mellow and round

    I travelled to Taiwan two years ago and became a big fan of Taiwanese tea. It isn’t easy to find truly authentic Taiwanese tea in the UK, so I’m really glad I discovered Formosa Tea Co.


    This green tea is excellent—mellow, rounded and refreshing, with none of the sharpness/bitterness I find in some Japanese green teas. I enjoy it very much and will definitely be coming back for more.
